Once you've deleted the mail in the deleted folder some O/S will keep it in another place for up to one week but after that it is not traceable in the normal way.
Once an item is 'deleted' from your HDD it is no longer available to normal Windows search but leaves a trace for special application. The space occupied by the deleted item however becomes available to Windows to write to and once that happens the 'deleted' item is gone forever.
Windows fills all those little spaces with fragments of stuff that you save. When you defrag, it re-arranges all those pieces of program/stuff and puts it together and in order so Windows can find it faster.
