I want to travel from UK to Denver then back from Tampa to UK. Single fares are massively expensive. Could I book a return and just not use the return ticket? Or does anyone know of a way to get single fares at a reasonable cost?

If you do decide to get 2 returns instead, make sure the second one is from Tampa (and not the uk) - not using the outward portion of a term rn flight usually invalidates the return portion. Are you flying between Denver and tampa? If so a multi stop ticket with one carrier might be your best bet

Looking at some random dates in May, Gatwick to Denver one-way is possible for as low as £184.90 up to an absolute maximum of £284.90, which doesn't seem particularly expensive to me.
Flights from Tampa to Gatwick also seem quite reasonable around the same time, with a lowest fare of £154.90 and a maximum of £284.90.

We rarely fly in and out of the same place, as others have said the Multi city option works well.
It may look stupid but we once priced a trip and the best price involved a bit more travelling, in your case it would be UK-Denver return and a Denver-Tampa return internally.
Beware of the London end, if London, some fly in and out of different airports, Heathrow and Gatwick.
Skyscanner are currently offering £390 for the multi city option in September, beware of dodgy ticket companies on there though.
