Sometimes, if the strike is late, the hook is taken too far down to be removed without damage. Common with small fish and large hooks.

cook it.
Return it to the water, a predatory fish such as a Pike will make a meal of it.
Do fish die when taking the hook out? I've never known it myself.

use it as bait
Apologies profusely, and console yourself with thought that'll at least you had some fun killing it.
Get the frying pan out.
If fishing for fun, you can limit the chances (if any) of any damage caused by the hook, by using a 'barbless' hook, then return the fish safely to the water asap.

Where fishing for food is permitted, take take only what you need and follow local rules.
Been fishing for 45 years....river and lake for all species including trout, pike and carp and never had a fish die when removing the hook
