I’ve got one of these, which is fine, but I’d like the same sort with a higher side wall (not a wok).

For instance, I was frying some potatoes as a base for a Spanish omelette (in a little olive oil), and found it very difficult to turn them using a food slice (plastic of course). They kept shooting up the side of the pan. There is a knack, which I am now developing!
I hope you're wrong, ummm, about them going 'off', as I'm well chuffed with this ceramic pan.
