I see honey in shops saying organic or lavender or whatever, just how do the beekeepers know where the bees have been to ?

They put the hives in the middle of fields where those plants are a monoculture, with loads of available flowers the bees don't need to go outside their local patch

Some Scout bees come back to the hives, and do a "waggle dance" to indicate where the good stuff grows
