houmous recipes often include tahini? what is it please?

It might not be in every recipe but I think tahini is more or less essential for an authentic houmous! I've tried without and it certainly affects the flavour, leaves it very bland I've found. I buy mine at a health food shop - you could try your local independent or Holland and Barrett. A big jar costs about �1.50.
Incidently, I've heard (but not tried) that you can make your own by whizzing sesame seeds to a paste and adding water until you get the right consistency (think slightly thicker than runny honey)
