making cakes and gas ovens

Hi all

just got a gas oven and im not having much luch baking with it.
any advice on making cakes in a gas oven?
never had problems with the electric one so i know im not doing something right.
I am baking near the top of the oven and leaving cakes in the oven longer.
I skewer them to ensure cooked properly and when i cut into them it looks moist in the middle and is heavy... help me

check your oven temps...An oven thermometer only costs a few quid. I have found that gas ovens do vary considerably in temperature
got gas oven myself and although myself and mother in law have got the exact same oven - hers is 'hotter' then mine (depends on the flow of gas in the pipes) try adding and extra teaspoon of baking powder.

Another 'beware' - the oven temp drops more and quicker when you open the door than an electric oven - I do hope we've not put you off - and in cold weather - if it's anything like us you'll find things take longer to cook ifeverybody's got their central heating on - the pressure goes down
As regards the cakes, wrap the outside of the tin in brown paper or 4 thicknesses of greaseproof - and put them on the middle shelf - i cook them longer at a slightly lower temp - then i leave in a turned off oven to go cold
