I never ever use beef mince, i've used turkey mince for years to make shepherds pie, meat balls and home made burgers and never had a problem. My children and others who i've cooked them for often praise me on recipes. all i do is add onion, garlic, powdered chicken or veg stock, paprika, ground black pepper, cayenne, dried mixed herbs and a little chopped coriander NO SALT, the veg or chicken stock contains salt....mix well and leave to cool in fridge for a couple of hours, this ensures that meat balls or burgers will not break up when frying, i always use olive oil to cook them, try it, you'll be well pleased.
