Believe it or not, I actually cooked last night! Real food!

I made this but changed the veg for ones I like.

Anyway, it was completely delicious and sooooo easy! Wondered if anyone had any suggestions for similar dishes that are easy, healthy and that I can adapt to my very very fussy tastes?

I'm not a big fan of beef...but this is delicious -

You can make old shoes taste delicious if yu cook them thusly, but I recommend you use eg chicken thighs with the skin removed:
Chop onion, celery and carrot in quantities that either please you or are to hand. Put olive oil in bottom of big pan and fry chopped veg gently. Then add things that take your fancy - the chicken of course; a spud; a leek; a can of tomatoes - any of these things could be about the pantry. A handful of red lentils will be nice. Let all ingrederments splutter awhile then add water sparingly to cover, and either slam in the oven with a lid on or simmer on a tiny heat for an hour or so. Salt and pepper to taste.
If you add more water this is a soup, less water you have a plateful.
I wouldn't remove the skin...it helps keep the chicken moist...unless of course you are obsessed with the fat content of your food.
