I made my pastry bases and blind baked them. Then I took them out and put the mincemeat in and laid the pastry tops on top, but I didn't blind bake the tops. Is that okay?

Life's too short to make mincemeat and why is everyone obsessed with mincepies in the run-up to Christmas?
