Duck Breasts

I sorted out my freezer at the weekend and found some duck breasts but have no idea what to do with them! Any suggestions gratefully received!!

I would just roast them - delicious, I love duck. You do need to roast on a rack so the fat drips into the pan below, though.

I like my breast simple - pop in a hot pan skin down, then turn serve medium rare with a lovely apple puree
