Anyone have any reccommended recipes for low fat flapjacks, biscuits or cakes? Please ones that you have tried and know they actually taste nice!!

Cream 4oz soft brown sugar and 2oz margarine, then beat in 1 egg and 1tsp vanilla essence.Sift in 2oz plain flour, half a tsp of salt , 1tsp cinnamon and half tsp baking powder then beat together well. Stir in 6oz oats and 4oz raisins.
drop spoonfuls of mixture onto a greased baking sheet and press down with back of a spoon.
Bake for around 15mins at Gas mark4 / 180c
Or , if you want to be very strict with yourself -
Put 1 cup all-bran, 1 cup sultanas, half cup brown soft brown sugar, pinch of mixed spice and 1 cup skimmed milk into a bowl and leave for one hour,
Lightly grease a 450g loaf tin and line base with greaseproof paper.Preheat oven to 170c / Gas mark 3.
Stir 1 cup of wholemeal self raising flour into the mixture, pour into tin and bake for 1hr 10mins.

I've tried using Splenda instead of sugar in my cakes and biscuits and it seems to work really well. Have you had a look at Rosemary Conley's Low Fat Cookbook, and one I can recommend is the Australian Women's Weekly "Best Ever Slimmers' Recipes." I've never tasted an AWW recipe that didn't taste good!
