Can anyone point me in the right direction for a coconut cake recipe (not maccaroons though), or does anyone know of a recipe.
My husband will be forever grateful and me too! Bizouxxxx

Weight 2 eggs and then weigh out equal measures of SR flour, sugar and butter. Cream together the butter and sugar, whisk in the eggs (one at a time) and a teaspoon of vanilla extract. Sift and fold in the flour and split mix between 2 greased sandwich tins. Sprinkle a handful of dessicated coconut on top of each and bake for 20 minutes until done. Remove from tins and leave to cool.
While the cakes are cooking toast a generous handful of dessicated coconut in a dry frying pan until golden and aromatic.
Grate about 2 tbsp creamed coconut block into a bowl and add enough hot water to make a thick, smooth paste. Leave top cool then add a small tub of double cream, a tsp of icing sugar and whisk until thickened to soft peaks stage. Using this to cover on of the sponges and then scatter over a handful of rinsed, chopped glace cherries. Place the second sponge on top to make a sandwich.
Finally (!) make up a simple glace icing with icing sugar and a little water and spoon over the sandwich. Scatter with toasted coconut and allow icing to set.
