In a restaurant would this dish catch your eye?

Venison carpaccio with pomegranate seeds, capers, Parmesan shavings, baby leaves and a horseradish and lemon creme fraiche dressing?

No. Too many different flavours for me.
Yes, love very rare meat and horseradish, like all the other stuff too. Sounds very tasty.

I wouldn't order it with the parmesan shavings as that doesn't do justice to the deer.

Hmmm, the Parmesan may be a step too far as with the capers the dish already has a salty element and with the creme fraiche dressing the light colour isn't really in demand but Parmesan is a classic with beef carpaccio.

Dive buddy, you must have had some really appalling experiences of carpaccio!

Baby leaves, micro leaves, shoots all terms for salad leaves that have just sprouted and are all cute and dinky as opposed to a bloomin' great wedge of the evil iceberg lettuce dumped on the plate.

Yes - as long as the venison is served rare and juicy, i.e. been allowed to rest properly.

I think the pomegranate would go with the venison. I`m not sure about lemon creme fraiche dressing though. I don`t really think of robust meat and lemon together.
I'd still go for a fishy option as a starter.
