I was going to write that it is normally accompanied by various different sauces so the flavour of the meat is academic. This link more or less confirms that as it is too young to fully develop t's own flavour. http://www.bbc.co.uk/food/poussin

Cut either side of backbone - only you can answer your question ;-)
Cut through the bottom of the chicken carcass and press down with palm of hand on backbone and listen to those bones snap as you flatten out the carcass. Good way to BBQ chicken and ensure equal cooking area.

That looks easy enough.

Most people would be pressed to tell any difference. But free range chicken always tastes better.

I bought a free range chicken, proper roam around one, and it took me straight back to my childhood and how chicken used to taste.

£12 for a chicken that just about fed two people is not feasible for a family of 5 though.
