Consisting of peppers, courgettes, red onions and tomatoes, for our evening meal tonight.
I go through the veg each day and use whatever seems to be going past it’s best.
Yesterday I made a huge pan of veg soup..cauliflower, leeks, carrots, a small tin of sweet corn..whizzed it briefly so it still had some discernible lumps in, chucked in a tin of chickpeas and a couple of tablespoons of an opened pot of Elmlea. We had a big bowl each and have frozen three more portions.
I have been cooking and freezing some very unusual meals lately. I think if you are basically a good cook then its not too difficult to come up with good ideas. Nothing wasted chez mois all so far except for a couple forgotten tomatoes that went mouldy.
The chickpeas add some protein, and we both like the texture of them, so adding them keeps us fuller for longer.
It may be bananas in this house which will go past their edible best, but I’m going to freeze them and make ice cream so they won’t go to waste.
The less meat we eat, the more I dislike it, both taste and texture. Never thought I’d say that...
Wouldn’t thank you for a steak now, used to love a rare ribeye though. It’s our local butchers sausages which I doubt we’ll ever give up, can’t beat ‘em.
I love a Sunday roast but the last couple of those we’ve had I could have equally enjoyed without the meat.
We’re running out of freezer space too canary, with all the freezing of soup and leftovers.
