How do sandwich shops make their sauces? If anyone here works in a sandwich shop would you have a recipe for satay or korma sauce?

4 tbsp peanut butter
2 tbsp sesame oil
1 tbsp soy sauce
1 tbsp honey
1 tbsp milk
1 garlic clove, peeled and crushed
� lime, juice only
Blitz it all in processor and for bit of crunch mix in some half blitzed peanuts, to smooth it out or make it more creamy we add mayo

Satay Sauce
⅔ cup Crunchy peanut butter
1 � cup Unsweetened coconut milk
� cup Fresh lemon juice
2 tablespoon Soy sauce
2 tablespoon Brown sugar or molasses
1 teaspoon Grated fresh ginger root
4 each Garlic cloves, minced
Crushed dried red chili peppers to taste.
Combine peanut butter, coconut milk, lemon juice, soy sauce, brown sugar, ginger, garlic and cayenne pepper to taste in a sauce pan over moderate heat and cook, stirring constantly, until the sauce is as thick as heavy cream, about 15 minutes. Transfer to a food processor or blender and puree briefly.
