not beaten the whites enough, and opened the oven door to check on their progress are two common causes.
Getting even the tiniest bit of oil in the whites is another possible reason.
been impatient and open the oven door to look probably.
It could also be because you have stirred the egg whites too much and not folded the egg whites which keeps them light and airy.
