Because international statesmen and women subvert their own discomfort in the interests of courtesy to their hosts, which increases the chances of productive dialogue, which is the point of a visit like this.

If the Grand Mufti was to visit France on a reciprocal visit, and he was offered snails at the banquet, you can be pretty sure he'd have a damn good go at forcing them down.

Muslims don't eat snails so the French would be far too polite to serve them to the Grand Mufti - and if the caterers did make a mistake you could be pretty sure he wouldn’t touch them.
