Can someone please explain to me why the EUSSR thinks it has any right to demand access to our waters for fishing. On what basis? ok so the French/Spanish fishermen will be annoyed if we stop them hoovering up the sea but that's not basis for claiming a right is it?

They believe we are still subservient to their demands and the fish issue is one of many they insist on before agreeing to a free trade agreement. Our fish is worth a lot of cash to them and there is nothing "free" about an agreement that gives it away.
They just try it on. They know that they have no rights but feel they have sufficient power to force others to heel. Probably helps that the Commission doesn't have the incentive to do right for it's members at the same level national leaders have. (Well I mean most national leaders since some seem utterly devoted to ensuring no UK waters fishing rights for their country.)
Yes, that's a good question. I can't think of a single good reason. I'm sure there are millions of people in the UK asking the same question.
What amazes me is that none of our broadcasters have attempted to answer it with a documentary or two while the 'negotiations' were ongoing. The BBC has been a model of impartiality on the subject, suggesting on BBC news yesterday that the issue was about 'continued access to each others waters.' Yes, 'each others waters'? I hadn't realised we were insisting on fishing in EU waters after Brexit (are we?).
It could even have helped negotiations if the general sense of puzzlement over here (regarding the EU's bizarre demands) had been televised - they must think we, like The BBC, think their demands are perfectly reasonable.
