That’s Some Hike
We fancied going away for Christmas and NY to our favourite place of Costa Teguise in Lanzarote, we have a friend who owns an apartment there we could use,okay I thought and went on Sky Scanner, the cheapest airfare was over £1000 I expected maybe £500 or so , looks like we’ll be staying here, I won’t be paying that kind of money on principle

I book hotels for business trips through work and pre covid the acceptable price pn was about £65 - £80 and now it's £120 minimum most of the time. Premier Inns are particularly over expensive. These prices went up during Covid and have never come down.
Budget airlines absolutely DETEST 'fare scraper' sites, such as SkyScanner, and do their absolute best to ensure that their fares don't appear on such sites. (Budget airlines make far more money from selling add-on, such as insurance, car hire and accommodation, than they do from many flights. So they need people travelling with them to have such offers leaping out at them when they book on their own websites, rather than not seeing them when they book through third parties).
So, while SkyScanner can be useful for long-haul flights, I'd never use it for short-haul ones. You can fly from Newcastle to Lanzarote for a total of £1078.20 for TWO people with Jet2, travelling out on either the 21st or 23rd December and returning on the 29th.

Ryanair, out on 19th December, back on 6th January. Total for TWO people = £874.60.
Tui, out on 18th December, back on 5th January. Total for TWO people = £1048.
(I can't find anything decent with Jet2 though).
