Ingredients
2oz (50g) butter
1 large onion, chopped
2 dessert apples, peeled, cored and diced
6 tomatoes, chopped
1 tbsp cider vinegar
1 tbsp sweet mincemeat (see separate recipe)
2 tsp dark brown muscovado sugar
salt and pepper
Method
1. Melt the butter in a saucepan and add the onions and cook for 10 minutes over a gentle heat.
2. Add the apples and cook for 2 minutes. Then add the rest of the ingredients and simmer gently for 10 minutes.
