left over pork

i have some cooked pork loin from sunday and usually make a creamy sauce with leeks and we have it rice (the imaginatively titled 'porky leeky thing').
But, I fancy a change - what would you do with it?

Cut pork into bite sized chunks. Fry some onions, garlic and mushrooms and add pork. Pour over some chicken stock and add paprika (I use loads), tomato puree and seasoning.
Simmer gently until pork feels soft and the sauce has thickened. Add several tablespoons of creme fraiche, bring to the boil and allow to simmer for five more minutes. I serve mine with penne but rice and potatoes would be just as good.
