Why is Lamb so Expensive to Buy?

I cannot justify paying for lamb as it is so costly. Strange, considering how many sheep we have in this country!

Having liver n onions for dinner tonight, do you flour the liver before pan fying it? I don't usually bother becuase i'm not sure the reason behind it! (always seems to taste ok without the flouring!)...
