Well, I think I have had two holidays - one in tenerife and one in Corfu - since I last contributed to this thread, so it was with some trepidation that I climbed on the scales. Bad news is that I am back to what I weighed at Christmas. Good news is that I am NOT back to what I weighed in September. I'm now trying to get back on the straight and narrow eating more fruit and veg and cutting out the amber nectar.
I have some fish recipes. My favourite one is easy as pie. Make a dressing with soy sauce, honey, garlic and grated ginger. Boil a sheet of noodles and then run them under the cold tap so they don't stick together. Chop up whatever salad ingredients you fancy - a bit of fruit might sound incongruous but is delicious too - and mix the whole lot together with a handful of king prawns.
Another easy one - put a salmon fillet on a piece of tinfoil, top with a couple of slices of lemon, season with salt and pepper, wrap tightly and bake in oven for 7-10 mins, depending on size of fish.
Last night, we had swordfish which had been cooked in just enough olive oil to top it sticking to the pan, with lemon juice squeezed over it. Served with Mediterranean roast veg and a few new potatoes yum yum
